Rabbit Pie

2 rabbits
1/4 cup butter or margarine
4 tablespoons flour
2 cups rabbit broth
Salt & pepper to taste
2 tablespoons chopped parsley

Clean and cut the rabbits into pieces. Place in a saucepan and barely cover with water. Bring to a boil, reduce heat and simmer until tender. Cool enough to handle and chop rabbit. Reserve 2 cups broth. Melt butter and add flour stirring constantly. Gradually add broth and stir until thickened. Add salt, pepper, parsley and rabbit. Mix well and stir until thickened. Pour into a pastry lined deep-dish pie plate. Cover with reserved pastry and cut several slits through top. Bake at 400 degrees until top is golden brown (about 15-20 minutes) and sauce is bubbling.
