Anna Lou's Squirrel

1-2 squirrel, dressed
Water to cover squirrel
1 teaspoon soda
1 - 2 tablespoons butter

Place dressed squirrel in a large saucepan. Cover with cold water, add 1 teaspoon soda and bring to a boil. Remove from heat and rinse squirrel well under running water (rubbing to remove soda). Return squirrel to pan and cover with fresh water. Bring to a boil, reduce heat and simmer until tender. Place squirrel in baking dish, dot with butter, and bake at 350 degrees until browned and crusty.

Tip:  Use the broth from cooking the squirrel to make delicious gravy. Rabbit can also be prepared in this manner. A pressure cooker is good for tenderizing squirrel or rabbit and works well with this recipe..

Editor's Note:  Anna Lou was my mother. She had a hard childhood and life in a poor section of the North Carolina mountains raising three children wasn't easy either. She and Dad were firm believers in utilizing whatever the good earth yielded when it came to hunting, fishing, and gathering wild berries and nuts. This recipe was one of her (and my) favorites, and throughout my boyhood we ate a great deal of squirrel in the fall and winter months..
