Apricot Duck Appetizers

1/2-1 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
Breast from 1 duck, cut into bite-size pieces.
2 tablespoons olive oil
2 tablespoons butter

Place flour, salt and pepper in a bag.  Add duck pieces and shake to coat with seasoned flour.  Lightly brown duck in olive oil and butter at medium high heat.  Do not overcook.  The duck should be pink on the inside.  Serve duck immediately with Game Apricot Sauce or your favorite dipping sauce.

Game Apricot Sauce:

1 cup apricot preserves
1/4 cup lemon juice
1/4 cup water
2 teaspoons cornstarch
1/4 teaspoon grated lemon zest
1 tablespoon sugar
2 tablespoons brandy

Place apricot preserves, lemon juice, water, cornstarch, lemon zest and sugar in a small saucepan.  Cook over moderate heat, stirring constantly, until thickened.  Remove from heat and add brandy.  Serve with duck or goose.

Tip: Try this sauce with venison for a  special treat.
