Pecan Crunch Sweet Potatoes
1 stick margarine
2 eggs
2 teaspoons vanilla
1 cup sugar
3 cups cooked, mashed sweet potatoes
Mix margarine, eggs, vanilla, and sugar
together. Add to mashed sweet potatoes. Place in baking
dish.
Topping:
1/3 stick margarine, melted
1 cup brown sugar
2 tablespoons flour
1 cup finely chopped pecans
Mix topping ingredients and crumble over potatoes. Bake at 350
degrees for 25-30 minutes or until bubbly and golden brown. |
