Wild Turkey Tenders
1 egg
1 tablespoon water
1 pound wild turkey breast, cut into 1-inch strips
1 cup all-purpose flour
1/2 cup canola oil
Salt and pepper to taste
Beat egg with water. Dredge turkey
strips in flour, dip in egg, then again in flour. Fry in oil
in a cast iron skillet until brown and tender. Season with
salt and black pepper. Do not over cook. Serve
immediately. Serves 3-4.
Tip: If the turkey is not tender, cover and steam a few minutes after you have browned the strips. The turkey will not be as crisp, but steaming will tenderize a tough bird. |
